Our Chef & Founder
The self-taught Latin Chef, Marcus Tirado, is the creative force behind the first "Birria" Taco Popup in Manhattan in 2019. A year later while most restaurants were closing due to the pandemic, Chef Marcus continued his dream and created the highly anticipated popup, "Viva Birria" during the summer of 2020. The popup sold out for months as the menu gained acclaim by food critics as one of the best tacos in New York City.
The Experience
"We set out to create an entirely new restaurant concept and experience based on the emerging food truck scene," explained Executive Chef & Founder Marcus Tirado. "Since the city does not allow food trucks in the Lower East Side, I decided to build my own. You have to see it to believe it!" While Viva Birria prides itself on its unique food truck concept, its main attraction is its innovative menu serving the highest quality and most flavorful Mexican Cuisine in New York City.
